Inspector's notes

The hand sink behind the front counter had a sanitizer bucket in the basin at time of inspection. Also observed an empty food container in the hand sink near the 3-compartment sink. Discussed with person in charge (PIC) that all hand sinks need to be easily accessible and ready to use at all times. Hand sinks can only be used for hand washing. PIC moved the containers at time of inspection. PIC will ensure establishment discontinues use of handwash sinks for all activities that are not for handwashing. PIC relocated all items blocking handwash sink at time of inspection. Corrective Action: Corrected at time of inspection.

Shellstock tags must be kept with shellstock until sold, dated with final sale date, and maintained in chronological order for 90 days onsite. Observed crates of tortillas, boxes of cooking oil, and juice being stored on the ground behind the front counter and in the kitchen. Discussed contamination risk and person in charge (PIC) lifted the food on to empty crates at time of inspection. Food must be stored at least 6 inches off the ground at all times to prevent contamination from the premises. Corrective Action: Corrected at time of inspection.

Observed a knife being stored between the lids of the reach-in cold-holding unit. Discussed proper storage of in-use knives. Person in charge (PIC) moved the knife to the 3-compartment sink at time of inspection. In-use utensils must be stored in a clean, dry location; in running water; or in hot water above 135°F. If utensils are stored in food, the handles must be stored above the surface of the food. All in-use utensils were properly stored at time of inspection.
