Inspector's notes

Observed 8 covered pans of pulled chicken with a prep date/time of 2-hours prior with an internal temperature of 44*F-50*F in the walk-in cooler using probe thermometer. Person in charge (PIC) stated the chicken may have warmed up while the chicken was being prepped. Advised PIC to uncover the pans to rapidly and check internal temp when chicken is left out during prep work. PIC uncovered the pans at time of inspection. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. All TCS foods cooling were uncovered to allow for rapid cooling. Corrective Action: Corrected at time of inspection.

Please ensure this unit holds 41*F if used to hold TCS food.

Corrective Action: Corrected at time of inspection. Cut lettuce, under temperature control, double panned in the cold well at 48*F internally. Manager stated the lettuce had been changed out throughout the day, but the pan had been in use for more than 6 hours. Embargoed, manager discarded. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below.

#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed an ambient air temp of 50*F in the right prep cooler on the assembly line when measured with a min/max thermometer. Inside the cooler, observed TCS foods holding between 48-54*F when measured with a probe thermometer including various preparations of cooked chicken, steak, hardboiled eggs, roasted sweet potatoes, roasted brussels sprouts, mozzarella balls, mozzarella, and bleu cheese. PIC provided cold logs from less than 4 hours prior showing all measured TCS foods at 41*F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
