Inspector's notes

Observed red and green salsa on the to-go line between 46-50*F. Ambient temperature taken of the top, cold part of the line was 53*F with a min/max thermometer. Per PIC, the salsas had been placed into the unit at 2pm. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

Observed 0 ppm Quat sanitizer in the 3 compartment sink actively being used to sanitize dishes at the time of inspection. Quat sanitizer should be between 200-400ppm to ensure the dishes are properly sanitized. PIC stated they had just filled the sink 20 minutes prior. PIC emptied the sink and refilled to test at 200ppm. Please replace hose on sanitizer dispenser. Correct By: Corrected At Time Of Inspection
