Inspector's notes

Observed a tightly wrapped 1/3 size pan (<4" deep) of cooked duck cooling at 49 degrees Fahrenheit in the walk-in refrigerator. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Per person in charge (PIC), duck was placed in walk-in to cool less than 4 hours prior to inspection, within the parameters for proper cooling times and temperatures. Plastic wrap was removed during inspection and cooling temperature was verified during the inspection. Corrective Action: Corrected at time of inspection.

Observed low temp mechanical dishwasher utilizing chlorine in active use at time of inspection with a chlorine concentration of 0ppm. Machine was ran a second time and observed at 0ppm. Machine was primed twice and ran three more times and observed at 100ppm of chlorine. Chlorine concentration must be 50-100ppm for proper and full sanitation to prevent spread of pathogens.
