Observed several TCS foods (shredded lettuce, sliced tomatoes, cheese, raw burger patties, and raw breaded fish sticks) holding at 46-48*F in small reach in prep cooler between grill and fryer in kitchen area. Cooler measured at 43*F at time of inspection. Per manager, items had been placed in cooler less than 4 hours prior and were removed to place in alternate cooler to bring down to 41*F at time of inspection. Manager will place ice and use smaller portions when items are restocked until cooler is holding at 41*F or less - reviewed proper procedures. Ensure all TCS foods are holding at 41*F or below. Predefined Comment: Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. According to the person in charge the walk in cooler door had been open for about an hour. Walk in cooler temperature not observed at 41°F or less. The walk in cooler appears to be malfunctioning. Establishment will use alternative cold holding equipment until the walk in cooler is serviced. Predefined Comment: All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Walk in cooler used to store multiple different types of TCS foods appears to be malfunctioning at time of inspection. Digital thermometer in the walk-in cooler measured between 52.4-50.4°F. Inspector’s min/max thermometer measured the minimum internal temperature of the walk in cooler at 48.9°F. All TCS foods were relocated to alternative cold holding at time of inspection.
