Inspector's notes

Observed frozen lemon puree in ziplock baggies, asked PIC where the items come from and was informed that the puree is made in a home and are not kept for more than 24 hours .All food must be obtained from an approved source as defined by law. Informed PIC that items made in a home are not allowed to be utilized as ingredients in the store, and had them discard the lemon puree. All food from unapproved source was discarded at time of inspection. Corrective Action: Corrected at time of inspection.

Observed knife with organic matter stored on magnetic knife holder on wall. All food-contact surfaces must be cleaned to sight and touch. Had PIC clean at the time of inspection and reminded them of the importance of keeping facilities and food equipment clean to discourage pathogen growth. Core-5-502.11, C: Frequency-Removal Observed a strong odor of waste emanating from the grease trap near the 3 comp sink. Waste receptacles must be emptied and cleaned at a frequency to minimize objectionable odors. The plumbing is currently still functioning at this time but if water begins to back up at any drain please stop operations and have plumbing serviced before resuming operations.
