Observed the metal cap of the atmospheric vacuum breaker (ABV) missing on the mopsink faucet. All plumbing must be maintained in good repair at all times. Discussed with PIC that the cap of the ABV should be replaced prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.

Observed the hot water sanitizing dishwasher to have a maximum temperature of 156.2F, measured with a calibrated min/max thermometer. The minimum temperature required for sanitizing wares is 160F. Observed that the establishment had no means of checking the maximum temperature of the hot water sanitizing dish washer. A thermometer that can read the maximum temperature of the hot water during the sanitizing cycle is required.
