Inspector's notes

Observed employee come out of walk in cooler where they were stocking shelves, don gloves, and then begin making pizzas without washing hands. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Employee properly washed hands at handwash sink at time of inspection. Discussed the importance of proper hand washing procedures with the person-in-charge (PIC). Proper handwashing procedure is to rinse hands with warm water, scrub with soap for 10-15 seconds, rinse with warm water, dry with approved drying provision, and turn off in a manner to prevent re-contamination of hands. Entire process should take approximately 20 seconds for full and proper handwashing to prevent spread of pathogens and contamination. Corrective Action: Corrected at time of inspection.

Observed no paper towels available at hand sink. Asked employee to show how they dry their hands and she showed that employee must open paper towel dispenser box to use paper towels inside. Informed employee that paper towels must be within reach and accessible to prevent contamination. Employee properly installed paper towels into dispenser box. Corrective Action: Corrected at time of inspection.

Observed a brown colored puddle beneath the right most soda fountain machine in the backroom. Informed PIC that this area needs to be cleaned and continue to be cleaned at a rate which preclude the accumulation of dirt, debris, and organic matter. PIC stated that the machine previously had a leak and is going to put in a ticket to have it investigated. Physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Must clean physical facility prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.
