A sign or poster that notifies food employees to wash their hands shall be provided at all handwashing sinks used by food employees and shall be clearly visible to food employees. Observed organic matter build up inside ice machines in facility. Ice machines need to be cleaned more frequently to prevent growth of organic matter. PIC stated that they would increase the cleaning frequency. Corrective Action: Correct prior to next routine inspection.

Observed unlabeled bin next to fryer. PIC had mentioned the contents of the bin and brought in a label maker to add labels. Food not readily identifiable on sight which has been removed from the original container must bear a label. Corrective Action: Corrected at time of inspection.

Observed multiple plastic containers stacked while wet on the clean dish rack located behind the 3 compartment sink. Please ensure that containers and other dishes are fully dry before stacking and putting them away. Stacking wet items such as pans prevents them from drying and may allow an environment where microorganisms can begin to grow. Corrective Action: Correct prior to next routine inspection.

Observed clear plastic tubs put away wet stacked on the equipment racks. Informed PIC that food contact surfaces and equipment must be allowed to air-dry before being stored as clean. PIC stated that the night crew does the dish cleaning and putting away. Suggested PIC have a discussion about letting equipment and food contact surfaces air-dry before putting them away with the night crew. All equipment and food contact surfaces must be air-dried after properly cleaning and sanitizing. Corrective Action: Correct prior to next routine inspection.
