During inspection observed large amounts of water pooling in the tray wash area due slow draining floor drains. At the end of the inspection, all floor drains were cleaned and working properly, except for one drain near the clean tray storage area. Discussed removing food from drains on the regular basis to prevent water from pooling. Please provide a work order stating the clogged drain is repaired. All plumbing must be maintained in good repair at all times.

The middle dish machine line was discharging sewage all over the floor. Food debris from the line had the floor drains clogged with debris, The sewage was ponded and about 2 inches deep, with employees walking through it. PIC had employees turn off the dish machine and used squeegees and brooms to remove the food so that the drains could drain all of the ponded water. Please ensure that if water starts ponding and the drains are clogged, that the dish machine is turned off and the area is cleaned and drained before continuing to work. The PIC stated they are still working on repairing the remaining handwash sinks. Per PIC, they are still waiting for parts to fix/repair the sinks and are working with FMD to resolve this issue.
