Inspector's notes
Observed no hot or cold water available at the mop sink due to no faucet or handles being present. Informed PIC that hot and cold water needs to be available at the hand sink. Hot water of: 100°F is required at all handwash sinks; 110°F at all other sinks; 120°F at mechanical warewashing units sanitizing with chemicals; and 140°F at mechanical warewashing units sanitizing with high temperature. Hot and cold water under pressure is required at all sink fixtures. Corrective Action: Correct prior to re-inspection on 01/26/2026.

Chef stated the chicken was cooked at 9am and the hot holding unit had been turned off by an employee at 11am. By the time of inspection, the hot-cooked TCS food in question had been out of temperature for longer than 2 hours. Hot TCS food must be hot held at 135'F or above and must be discarded if out of temperature for more than 2 hours. Chef was instructed to discard the cooked chicken in question.
