Observed REACH-3 refrigerator operating at 46'F via min/max thermometer at time of inspection. Per PIC, this unit is used to store items in the cooling process and was recently stocked about one hour prior to inspection. TCS food including cut tomatoes (47'F), boiled potatoes(57'F), mixed fruit (46'F) stored within was moved to alternative refrigeration. Instructed PIC to discontinue use of refrigerator until repairs are made, such that all TCS food products within are maintained at or below 41'F. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Corrective Action: Corrected at time of inspection.

Observed 3 floor drains at the hot food prep area full of sewage at time of inspection, and not capable of conveying sewage. PIC stated floor drains sometimes fill up when other sink basins are emptied during shift change. Discussed the importance of being able to properly convey sewage at all drains throughout establishment. On-site maintenance was able to snake the areas in question to restore functionality at the floor drains at time of inspection. Corrective Action: Corrected at time of inspection.
