Observed the hot water handle on the hand sink unable to turn, allowing only a trickle of water temping at 71*F to flow. Informed employee that there needs to be hot water provided at the hand sink prior to reinspection on 06/20/2025. Hot and cold water under pressure is required at all sink fixtures. Provide adequate hot water at all sink fixtures prior to re-inspection. Corrective Action: Correct prior to re-inspection on 06/20/2025.

Employee was unable to answer questions regarding the procedure and location of objects related to sanitizing of food contact surfaces. Observed the hand sink in the back to be missing hand drying provisions. Informed employee that the hand sink needs to always be stocked with soap and hand towels. Napkins were provided as hand drying provisions at time of inspection. There were no paper towels available onsite at time of inspection. Discussed with employee that they need to obtain paper towels. Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. Hand drying provisions for handwash sink were provided at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes
Observed TCS food products in the reach in fridge with temperature ranging from 44*F-48*F. These products include milk, bacon, yogurt parfaits, butter, various breakfast sandwiches containing egg, meat, and cheese, perishable fruit juices, deli meat and cheese snack sticks, snack trays containing cheddar cheese, steak burritos, steak and cheddar sandwiches, buffalo and barbeque chicken. PIC stated that these items had either been placed in the unit the day before or at two o'clock in the morning after a delivery. Informed PIC that items had been in the unit for longer than four hours and need to be discarded. PIC discarded all items at time of inspection and all items were embargoed. The unit was holding an ambient air temperature of 43.7*F, measured using min/max thermometer. PIC stated that the unit has a part being replaced in a few days. PIC agreed to not use the unit until it can properly cold hold TCS food products at 41*F or below. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.
