Observed wet wiping cloths sitting on the cutting boards across the kitchen. Informed PIC that wet wiping cloths need to be stored in an approved sanitizer concentration at all times. PIC removed the cloths from the cutting boards at time of inspection. All wet wiping cloths must be stored in sanitizer buckets with approved sanitizer concentrations. Wiping cloths were placed in sanitizer buckets with approved sanitizer concentrations at time of inspection. Corrective Action: Corrected at time of inspection.

Observed raw chicken stored on top of RO packaged raw steaks. Informed PIC that the steaks need to be stored above the raw chicken, according to cooking temperature. PIC properly stored the raw animal proteins at time of inspection. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Observed the hose bib vacuum breaker calcified and leaking at the outside mop sink. Informed PIC that the hose bib vacuum breaker needs to be brought into good repair. Observed a hose with a shut off valve connected to the mop sink. Informed PIC that a new hose needs to be acquired without a shut off valve. All plumbing must be maintained in good repair at all times. Must repair all plumbing to a state of good repair prior to next routine inspection. Shut-offs, including chemical dispensers and sprayer nozzles, are not approved for continuous installation downstream from vacuum breakers. Corrective Action: Correct prior to next routine inspection.

Observed an open top employee drink cup on top of boxes of hashbrowns in the storage room. Informed PIC that the drinks need to be covered, have a straw, and placed in an area that will not contaminate food. Drinks were moved to the designated employee item area. PIC will enforce caps and straws and keep the employee items in designated areas. PIC moved employee consumables to the designated area and will retrain on proper eating, drinking, and tobacco use. Corrective Action: Corrected at time of inspection.

Observed the drainpipe for the back hand sink to be draining only partially over the floor drain, with the rest of the water filling the floor in the surrounding area. Informed PIC that the pipe needs to be moved so that it is draining fully into the drain. Observed the drainpipes under the ice bin fallen into the floor drain. Informed PIC that the drainpipes need to be lifted so that there is a one-inch airgap between the outlet of the pipe and the top of the drain. All plumbing must be maintained in good repair at all times. Must repair all plumbing to a state of good repair prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.
