Door remained operational and the locking mechanism was functional. Equipment was operating at 68'F at time of inspection. PIC stated that the cabinet runs through a thawing cycle of 3-4 hours at different temperatures (38'F, 66'F, 38'F) . Items were removed from thawing cabinet and placed in alternative refrigeration holding at or below 41'F to continue thawing 2 hours prior to time of inspection. Discussed with PIC about using a specialized process and equipment to thaw food products requires a variance. Establishment does not have an approved variance for this process. Prior to re-inspection on 3/29/2024, establishment must either: submit for a variance for the equipment or adjust programming of equipment to only function at 41'F or below and provide letter stating equipment will only be used in this manner. Observed container of cut cabbage stored in open-top prep table across form heat source with an internal temperature of 48°F at 3pm. When asked how long they had been there, the person in charge stated that they had been in the open-top prep table since 9:00am. Establishment must maintain time or temperature controlled for safety (TCS) foods at 41°F or below. Cabbage was embargoed at time of inspection (see embargo form).
