#16 — Food-Contact Surfaces: Cleaned and SanitizedPriority4-501.114

Inspector's notes

Establishment uses quaternary ammonium sanitizer to sanitize their dishware. Tested the sanitizer concentration in the 3rd basin labeled sanitizer. Observed 0 ppm of quaternary ammonium on the test strip. PIC discarded the sanitizer water and refilled the 3rd basin from the automatic dispenser. Noticed that sanitizer is not being pulled from the bag. Tested sanitizer levels again and observed 0 ppm. Had PIC hand dose the sanitizer. Establishment has no sanitizer test strips to test the concentration. Inspector used their own test strips to check the sanitizer level which then read between 150 - 200ppm. Discussed resanitizing any dishware that has already been washed and sanitized today. Discussed repairing/replacing the chemical dispenser. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed a mop sink faucet equipped with an AVB feeding directly to a chemical dispenser. PIC disconnected the hose at the time of inspection. Discussed providing a dedicated water line for the chemical dispenser. Mop sinks with an integrated AVB may not be connected directly to a dispenser. Also discussed removing the faucet filler near the 3-compartment sink, and switch to using bottled water or a water cooler. Current set-up is not approved due to the design. Since the water filler is not permanently attached to the wall this could provide a backflow issue. Hose also sits on top of the 3-compartment sink drain board. The length of the hose is also too long to where it can fall on the ground and create a food safety concern. Discontinue use. Corrective Action: Corrected at time of inspection.

Inspector's notes

A chemical dispenser was connected to the mop sink faucet below the air vacuum breaker via a wasting-tee device. A PLUMBING SYSTEM shall be designed, constructed, and installed according to LAW. Installing a “side-kick”, similar downstream shut-off device, or obstruction places back pressure on the AVB. Since the atmospheric vacuum breakers could be kept on under constant pressure at all times, they will fail under such installations. Chemical dispensers that are connected to a faucet with a pressure bleeding device on the faucet outlet, this includes devices referred to as a wasting tee, flow-through device, or otherwise known as a “sidekick” device are considered obstructions and are not approved by the Department, as they are prone to fouling/plugging failure under typical water and operating conditions found within Maricopa County. There is now a potential cross connection hazard. The device was disconnected from the faucet as a temporary correction. Corrective Action: Corrected at time of inspection.
