Observed that items in hot hold case had no times of when food must be discarded. Afternoon shift explained proper procedure for time marking foods. All Temperature Control for Safety foods being held under time as a control were properly time stamped at time of inspection. Discussed short training reminder for staff to date stamp foods. Corrective Action: Corrected at time of inspection.

Observed hot foods(Chicken wings and chicken strips closest to sliding doors) in deli case below 135*F with no discard times provided. Corrective Action: Corrected at time of inspection. All TCS foods being held under time as a control were properly time stamped at time of inspection. Person in charge chose to discard product instead of marking correct discard time. Advised staff to place into hot hold case after heating as soon as possible, not all at once. Corrective Action: Corrected at time of inspection.
