Inspector's notes

Observed real butter out on time as a control on tortilla counter at 83*f degrees. Time stamp on butter indicated it was printed and placed 5 minutes prior to beginning of the inspection. PIC stated butter was put out 2 hours prior. Time stamp was adjusted to correct time at the time of inspection. Discussed time stamping items on time control when placed out as to not exceed the 4 hour time limit for discard. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed shredded lettuce on the cold side of the serving line at 46-48'F and rolled tacos and flautas in the top of the reach-in cooler near the fryers at 51'F at the time of the inspection. Person in charge decided to discard food product at the time of the inspection before time out of temperature could be determined. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Spoke with person in charge about potentially utilizing time as temperature control for these items, especially if they are used up frequently. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed salsa reach-in cooler in front service area with ambient temperature of 45.5*F, and small reach-in prep cooler in back area used for tortillas holding at 55*F. Salsas in salsa prep cooler had recently been placed in cooler to cool down, and were immediately moved to alternate cooler, and only small amount of shredded lettuce (recently placed) was in small reach-in cooler in back prep area. Manager placed call for service at time of inspection, and units will not be used for TCS foods until fixed and holding at 41*F or below. Corrective Action: Corrected at time of inspection. 3-501.15 (B) - Core: Cooling Methods; Covered and Properly Arranged Containers. Observed salsa stored in the drink fridge with a temperature of 46F. The PIC was unsure about how long the salsa was in the fridge for. Except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 41°F or less. Discussed with person in charge on having to remove the chemical line from the main water line when not in use.
