Observed cut shredded lettuce in two large white container with lid on top. One had internal temperature of 44*F. The other 53*F. Notified employee. Per employee the cut lettuce was prepared yesterday. Ambient temperature of the unit is at42.8*F-45*F. Employee confirmed internal temperatures. Notified Person In Charge (PIC). PIC had employee discard improperly cooled cut shredded lettuce. Corrective Action: Corrected at time of inspection.
