Observed cooked rice, and fried tofu being stored on top of prep top cooler during inspection. Items measured 61 and 67 degrees F respectfully. Employees said they had been prepared within the last hour and moved them to cooler at time. Additionally, spring rolls were being stored near rice cookers and measured 72 degrees F. These items were moved to cooler at time as well. Please ensure all time/temperature controlled for safety food items are maintained at 41 degrees F or below when cold holding. Corrective Action: Corrected at time of inspection.

Observed raw chicken and fish stored above raw eggs, and raw chicken, fish, and eggs stored above cooked rice in reach-in cooler on prep line. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. When cooling cooked time/temperature control for safety foods, the food should go from 135*F to 70*F within the first two hours, then 70*F to 41*F in the next four hours for a total of six hours of cooling.
