Food items on the bottom 2 shelves were stored overnight (12/5) and were improperly cooled. PIC stated that the food was not for sale and was there for staff to take home. Advised PIC to label the rack/shelves for "Personal Use/Staff Use" at time of inspection. Also discussed cleaning frequency of Food-contact surfaces(FCS).

Observed raw rosemary garlic chicken stored directly above raw bacon wrapped jalapenos while on a speed rack in walk-in #2. Discussed proper food storage according to final cooking temperatures with PIC. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Corrective Action: Corrected at time of inspection.
