Inspector's notes

Observed a package of cheese sticks with a best by date of 05/2025 inside of a small countertop refrigerator. The cheese sticks were well past the date on the packaging, and the cheese sticks appeared to have some type of white slimy material in them. The cheese sticks were embargoed at time of inspection (see embargo form). Discussed with person in charge to check best by/use by dates for time and temperature controlled for safety foods and to rotate/dispose of products accordingly. All food must be in good condition, safe, and unadulterated. All adulterated food was discarded at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed cheese sticks and packaged sandwiches with an internal temperature as measured using a probe thermometer ranging from 54°F - 56°F in a small countertop refrigerator. According to the person in charge, the food had been in the refrigerator for more than 4 hours. The time and temperature controlled for safety foods were embargoed at time of inspection (see embargo form). Discussed with person in charge to repair/replace the refrigerator unit and to keep other time and temperature controlled for safety foods in other alternative refrigeration until that unit is repaired/replaced. The establishment has sufficient cold holding capacity for safe operation. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
