Inspector's notes
Observed milk and protein shakes in reach-in cooler with an internal temperature of 46*F. Internal temperature registered with an internal probe thermometer. Per PIC the unit was recently stocked and doors remained open during this period. Ambient temperature of unit originally registered at 45*F, but had reduced to 41*F by the end of inspection. PIC stated all TCS food items had been in unit for at least 24hrs. can be stored in equipment that maintains an ambient air temperature of 45°F or below. Suggested to PIC that all TCS food items should remain in one unit that does not have non-TCS food items, not being held at temperature, placed inside of unit. Corrected at time of inspection.
