In the right cold table at the cooks line, observed small metal container of guac containing diced tomatoes with internal temperature of 56-60 degrees F and a small metal container of diced tomatoes with internal temperature of 46-51 degrees F. PIC stated items were prepared that morning about an hour prior and placed directly into cold table after prep. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. PIC relocated items to the walk in to cool at time of inspection. Corrective Action: Corrected at time of inspection.
