In the right cold table across from eggs, observed turkey sausage with internal temperature of 70-71 degrees F, sausage links at 50-51 degrees F, and corned beef at 46 degrees F. All items were prepped within the last hour and placed in cold table. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. This advisory was conducted with RS #979. With 7 Spanish-speaking employees in a classroom-style setting, we discussed proper handwashing and glove use, cross-contamination, cleaning and sanitizing food-contact surfaces, employee illnesses and symptoms, storing and labeling of toxic chemicals, hot-holding, cold holding, cooling, temperature danger zone, and the importance of using thermometers frequently (all in Spanish). We also spent time in the kitchen observing hand-washing practices and had follow-up discussions concerning the training. The advisory report was emailed.
