Corrective Action: Corrected at time of inspection. Employee handling food touched their clothing and continued food handling without washing hands. Manager had employee wash hands. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks.

Corrective Action: Corrected at time of inspection. Cream under temperature control in three whipping cream carafe dispensers at 45*F to 49*F internally for unknown time. Embargoed, employee discarded. Discussed assuring the cream in the insulated dispensing carafes is 41*F or below when the carafes are closed and charged. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below.

Whipping cream in charged, insulated carafes at 47*F to 52*F internally for unknown time. Embargoed. Whipping cream improperly cold-held was discarded by PIC at time of inspection. Discussed storing carafes open, in the reach-in after washing in the 3 comp sink, rather than in the high-temperature automatic dishwasher. Then ensuring cream is put into cold carafes and remains at 41*F or below before sealing and charging. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below.
