Inspector's notes

Observed pizza sauce tub on counter at room temperature without a label stating what time it would be discarded. PIC placed a sticker on the tub at time of inspection. Also observed portioned pizza sauces for to-go orders with an internal temperature of 67*f. Label on product stated product could be used until 9/3, more than 24 hours. PIC stated portioned sauces are moved from temperature-controlled environment for a short period of time and then moved back to walk-in cooler. Please follow time as a control policy and document or keep under refrigeration at all times to prevent bacterial growth. PIC moved to walk-in cooler to rapidly chill. All TCS foods being held under time as a control were properly time stamped at time of inspection. Corrective Action: Corrected at time of inspection.

PIC provided documentation to show the equipment is food safe. However, the mat does not meet the criteria for "Smooth" means: (1) A FOOD-CONTACT SURFACE having a surface free of pits and inclusions with a cleanability equal to or exceeding that of (100 grit) number 3 stainless steel; 4-101.11 Characteristics. Materials that are used in the construction of UTENSILS and FOODCONTACT SURFACES of EQUIPMENT may not allow the migration of deleterious substances or impart colors, odors, or tastes to FOOD, and under normal use conditions shall be: P (A) Safe; P (B) Durable, CORROSION-RESISTANT, and nonabsorbent; (C) Sufficient in weight and thickness to withstand repeated WAREWASHING; (D) Finished to have a SMOOTH, EASILY CLEANABLE surface; and (E) Resistant to pitting, chipping, crazing, scratching, scoring, distortion, and decomposition.
