Observed several TCS items in the walk-in cooler with internal temperatures ranging from 50-55*F when measured with a probe thermometer. According to manager, walk-in cooler was functioning at 6:30AM but there were no temperature logs available to verify internal temperatures of TCS food. All TCS food must maintain internal temperatures of 41*F and below. TCS food was embargoed at time of inspection. Corrective Action: Corrected at time of inspection.

Observed sour cream, machaca (shredded beef), pico de gallo, guacamole, shredded cheese, chicken, diced ham and sausage, raw eggs with an internal temperature of 47-53*f in make table. Sour cream and guacamole were discarded (53*F) and all items were moved to walk-in cooler to rapidly chill since they had been re-stocked less than 2 hours prior to inspection. Remaining TCS foods in make table were holding internal temperature of 41*F and advised keeping all foods on ice to keep minimal food on line.
