Inspector's notes

Bottled milk in reach-in cooler nearest front entrance found with internal temperature of 50*F. PIC stated the cooler had just broke down about 10 minutes ago and moved the milk and other food items in the cooler to the walk-in for cooling and continued cold holding. Sliced cheese and sour cream found in lower portion of the make-table cooler with 45*F internal temperatures. PIC stated the items had been in the cooler for less than a couple hours and moved them to the walk-in for cooling and continued cold holding. Please ensure cold held TCS food items are maintained at 41*F or below. Corrective Action: Corrected at time of inspection.

#11 — Gross Insanitary Conditions that may Endanger Public Health (ISFD)County code (MCEHC)

Condensation drain line in the ceiling was clogged and a T-joint was installed on the line where water was pouring out of the uncapped side of the T-joint. The leak had been slowly building up for about a week and was now pouring out substantially over the ware wash station area, hand wash station, and also beginning to affect the coffee station, microwave station, paper and plastic wares storage, and cashier area. PIC had repair technician onsite within 15 minutes of inspector's arrival. The repair technician was able to identify and repair the leak within 20 minutes. The water pouring from the ceiling in all areas lessened dramatically but was still dripping due to saturation of the ceiling panels and airduct insulation. PIC ordered the restaurant to be closed while cleaning, sanitizing, and repairs to the facility are completed. Inspector will return tomorrow morning to ensure cleaning is complete and all affected areas are safe to operate. Restaurant was posted closed. Operations will not resume without MCESD approval. PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding. - Lower portion of prep cooler found with internal ambient temperature between 45-50*F. TCS food items such as sliced cheeses and sliced tomato found with internal temperatures between 46-50*F. Internal food temperatures were verified with PIC's and inspector's calibrated probe thermometers. PIC provided log showing the cooler was last checked at 11:00 AM and had an ambient temperature of 37*F. PIC discarded the TCS food items in the cooler (see embargo list). The cooler will not be used for cold holding TCS food items. TCS food items will be brought from the walk-in to be placed atop under time control rather than from the bottom of the cooler to the top under time control. The lower portion of the cooler will not be used for cold holding TCS food items until it is replaced/repaired and able to maintain an ambient temperature of 41*F or below. Please ensure cold held TCS food items are maintained at 41*F or below. Correct By: Corrected At Time Of Inspection
