Core-4-903.11(A), (B) and (D) , C: Equipment, Utensils, Linens and Single-Service and Single-Use Articles-Storing; Utensils, Equipment and Linens - Assembled sauce pump in clean storage found with cloudy or opaque water inside the pump. Inspector moved the pump to ware wash station for cleaning. The pump likely didn't air dry properly due to being assembled before it was dry. Inspector advised to air dry each piece of the pump separately before assembling and placing in clean storage. Equipment shall be positioned in a manner that promotes self-draining and allows for air drying. Correct By: Corrected At Time Of Inspection
