Observed handwashing sink near behind hot holding cases without any hand drying provisions. Discussed with PIC that Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. Inspector's notes

Observed individual cheese rounds and refrigerated ready-to-eat sandwiches in an open-air refrigerator with internal temperatures as measured using a probe thermometer of 43°F - 46°F. A min-max thermometer was placed in the open-air refrigerator to measure ambient air temperature and was allowed to stabilize for 10 minutes. The ambient air temperature was holding at 46°F. According to the person in charge, the food had been in the unit from the night before and the food was embargoed at time of inspection (see embargo form). Discussed with person in charge to use additional thermometers in the space to have a more accurate representation of the holding temperature. The establishment has sufficient cold holding capacity to maintain safe operation. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Observed some soda nozzles with organic buildup on the inside of the nozzles. Person in charge removed the soda nozzles and placed them in the sink to be washed, rinsed and sanitized.
