PIC discarded the butter. Shredded cheese triple-panned on top portion of salad cooler with internal temperature of 56*F. Cupped dressings in top portion of salad cooler with internal temperature of 50-57*F. Cheese and dressings were discarded. Discussed cold holding methods including ice bath construction, adherence to fill-line, and possible use of time as a control when needed. Please ensure cold held TCS food items are maintained at 41*F or below. Corrective Action: Corrected at time of inspection.
