-- Hand sink near front kitchen entrance unable to supply hot water due to broken handle. Reviewed MCESD requirements with the person in charge: Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. A re-inspection will be conducted within 10 days to verify the hand sink is repaired. The establishment has sufficient hand washing facilities available in kitchen to safely remain open while awaiting repairs. Corrective Action: Correct prior to re-inspection.

Inspector's notes

Shake mix in top of shake machine found with internal temperature between 39-48*F; verified with both PIC's and inspector's calibrated probe thermometers. PIC stated the mix was place in the machine about 2 hours ago. The coldest temperatures were at the back of the machine while the warmest were about 4 inches from the back all the way to the front. PIC will not use the machine until it is able to maintain the mix at 41*F or below. PIC will discard the remaining mix. Please ensure cold held TCS food items are maintained at 41*F or below. Corrective Action: Corrected at time of inspection.
