In walk-in cooler a 5-gallon buckets of whole cooked beans measured an internal temperature ranging from 54-67'F. Per employee beans had been cooked overnight. As beans had not cooled within proper time frame they were embargoed. Discussed with person in charge proper cooling methods that can be used to ensure that food cools properly. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. Corrective Action: Corrected at time of inspection.
