PIC scheduled a service request to address the issue at time of inspection. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. Observed establishment unable to produce hot water at the prep sink and designated hand sink which were tested at time of inspection: hand sink(68-72'F), prep sink(69-71'F). 3-comp sink was able to produce hot water by the end of the inspection. Discussed hot water requirements with PIC. Hot water generation and distribution systems must be sufficient to meet the peak hot water demands throughout the food establishment. Hot water of: 100°F is required at all handwash sinks; 110°F at all other sinks; 120°F at mechanical warewashing units sanitizing with chemicals; and 140°F at mechanical warewashing units sanitizing with high temperature. Provide adequate hot water at all sink fixtures, and review distribution systems to meet minimum hot water demands prior to re-inspection on 2/13/2025. Instructed PIC to set up 3-comp sink until dishwasher has been serviced and is able to dispense chlorine sanitizer onto food contact surfaces at 50-100PPM or per manufacturer's recommendations. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels.
