Of note: combi-style oven is not installed with the required backflow preventer by the Department and only has a brass single-check valve in the water supply line. Combi-style ovens with a permanent water connection require installation of an ASSE 1013 reduced pressure zone (RPZ) backflow preventer at the water supply line that is placed at least 12 inches higher than the nearest floor drain and leads to that drain with durable, rigid material. Person in charge (PIC) provided written statement establishing that the water connection will be disabled and that the establishment will discontinue usage of the self-clean, steam cook, and combination steam-convection cook features until the unit is reinstalled according to Department requirements. Re-installation of the combi-style oven with the water connection may require a remodel application for equipment affecting water demand.
