PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. Observed small cooler under toaster oven with an ambient temperature of 47.3*F measured with inspector min/max thermometer. Cooler contained pans of sliced ham, sliced turkey, sliced tomatoes, and shredded lettuce. Ham measured 44*F-46*f, turkey measured 44*F-47*F, tomatoes measured 42*F, and lettuce measured 40*F. Person in charge stated that they had just sliced the meats 1 hour prior to inspection. Person in charge moved all product to walk-in cooler to maintain proper temperature at time of inspection. Person in charge called for service at time of inspection. Discussed with person in charge that all time temperature controlled foods should be maintained at 41*F or below when cold holding.
