Observed the kitchen dish machine being used to wash, rinse, and sanitize dishes at time of inspection. Final rinse chlorine sanitizer concentration measured at 0 PPM. Final rinse chlorine sanitizer concentration shall measure between 50-100 PPM. It was determined the supply of sanitizer was empty. After replacing the sanitizer supply and running the dish machine three more times the final rinse chlorine sanitizer concertation measured at 0PPM each time. PIC agreed to sanitize food contact surfaces in the three compartment sink until the dish machine is serviced and final rinse chlorine sanitizer concentration measures between 50-100 PPM. Discussed utilizing test strips to verify sanitizer concentration prior to using the dish machine. Corrective Action: Corrected at time of inspection.
