The 3-compartment sink is being used to wash, rinse, and sanitize. Discussed the Reverse Osmosis system that has been installed in the kitchen. The RO system can be removed and replaced with an in-line water filter or has the following requirements which must be approved prior to installation: 1) Replumb the drain line into an approved funnel drain with a 1-inch air gap. Provide a rigid drain line. Current set-up draining into the tailpiece of the sink is not approved. 2) Provide an ASSE 1013 RPZ backflow device (recommend stainless steel housing) upstream of the water system. Do not install any copper or brass downstream of the backflow device. Provide a funnel drain below the relief valve of the RPZ backflow device and drain to the floor sink. 3) Test and certify the RPZ backflow device and provide the test report.

Observed 2 open containers of hummus, an open container of cream cheese, what appeared to be cream of chicken soup, diced tomatoes, and sliced American cheese, without date marks. The containers of diced tomatoes and chicken soup observed to have several areas of mold growing on the food. PIC unsure of when the foods were opened and voluntarily discarded, see embargo form. Discussed 7-day date marking. Day 1 begins the date that a package of TCS food is opened, such as deli meats, or cooked/prepped, such as noodles or proteins. Adding 6 to day one (6+1) determines the discard date. The Food Code requires that TCS foods be dated and discarded 7 days after opening/prep when held at 41F or less to prevent a hazardous amount of Listeria. Listeria is the pathogen of concern, which cannot be observed by looking at the food in question. Corrective Action: Corrected at time of inspection.

Cook restocked the paper towels. According to cook, the dry good boxes have not yet been opened and stocked, including the paper towels. Discussed the importance of restocking paper towels for proper handwashing, which is required whenever hands are contaminated while wearing gloves and working with food or clean equipment, upon entering the kitchen to work with food or clean equipment, changing tasks etc. Facilities must be maintained in a condition that promotes handwashing. Handwashing sinks must be maintained so accessible at all times, not used for other purposes than hand washing, and supplied with warm water, soap and paper towels.
