Observed lettuce and tomatoes at 46-47*F. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Please ensure logs are properly filled out and temperatures are routinely verified. Corrective Action: Corrected at time of inspection.

Observed preparation table with an internal ambient temperature of 51*F, measured by min-max thermometer. Upon further investigation by the person in charge, it was discovered that the coils of the unit had frozen over. Unit was removed from use. Establishment has sufficient cooling capacities to continue operating. Corrective Action: Correct prior to re-inspection. **Re-inspection scheduled for 3/26/26. Please ensure that unit has been serviced and is properly working prior to re-inspection and ensure that the unit is not used until it is restored to a functional capacity.
