PIC stated that both items were being stored at ambient temp for about 4 hours and discarded-see embargo form. Ensure that TCS food items are maintained at 41F or below. ****The make line cooler is not functioning or in use at time of inspection. The PIC stated that all food items are being held in the walk in cooler. Discussed how to set up an ice bath with the PIC. Corrective Action: Corrected at time of inspection.

Ambient temperature was 52.5*F using min/max thermometer. Person in charge did a temperature check at approximately 9:10am, time of inspection was approximately 12:40pm. PIC opened the attached freezer door to rapid cool the walk-in refrigerator. Ambient temperature was below 41*F at end of inspection. Corrective Action: Corrected at time of inspection.
