Queso cheese found with internal temperature of 118-126*F; verified with both inspector's and PIC's probe thermometers. PIC said the cheese began reheating sometime this morning and was unsure of the exact time. PIC voluntarily discarded the cheese. Please ensure TCS food items are reheated to appropriate temperatures within a 2 hour time frame. Corrective Action: Corrected at time of inspection.

Precooked green chiles found in open container of walk-in and another open container in reach-in cooler near fryers. Both containers were dated of being prepped1/4/25 with a discard date of 1/8/25. PIC discarded both items. Discussed date marking (today+6) with PIC for labels and daily review of date marked items.
