Inspector's notes

Observed cases of individual bottles of milk with internal temperature of 51°F in walk-in beverage cooler. Also observed small container of thawed hot dogs with internal temperature of 50°F. Ambient air temperature measured 52°F. Per manager, they had been out and and the staff did not place the TCS food items in the proper area after delivery yesterday. Manager discarded items at time of inspection. Discussed adjusting beverage/beer walk-in cooler to maintain an ambient air temperature of 41°F or below if TCS food items are also being stored in same cooler. Or use reach-in coolers to store extra product to ensure proper cold holding. THIRD CONSECUTIVE VIOLATION. Corrective Action: Corrected at time of inspection.

Observed case of individual bottles of milk and containers of thawed out hot dogs, pre-cooked hamburger patties, and pre-cooked rib patties with internal temperatures ranging between 48°-50°F in beverage walk-in cooler. Ambient air temperature of cooler measured 47.8°F at time of inspection. Manager was unsure of how long items were above 41°F. All TCS foods improperly cold held were discarded by manager at time of inspection. Discussed keeping TCS food items in reach-in cooler until beverage cooler has been serviced and maintains an ambient air temperature of 41°F or below. Second Consecutive Violation. Observed areas of kitchen floor with unsealed and cracked concrete flooring. Concrete floors shall be finished smooth, sealed, and have all cracks properly filled. All floors, walls, and ceilings must be maintained and repaired such that it is smooth and easily cleanable. Repair physical facility prior to next routine inspection. Corrective Action: Correct prior to next routine inspection. 6-501.114 - Core: Maintaining Premises, Unnecessary Items and Litter Addl Notes: Observed non-commercial stove and refrigerator stored in back kitchen prep area. Manager stated they have spoken to their boss about having it removed. Unnecessary items will need to be removed to prevent harborage conditions. The premises shall be free of items that are unnecessary to the operation or maintenance of the establishment such as equipment that is nonfunctional or no longer used; and litter.
