Observed a tomato and onion chopper with food residue still stuck inside the grid moving part of the chopper. According to the person in charge, the chopper was stored as clean. Also observed other dishes at the clean dishes rack with observable food residues and small scraps still stuck to pans and inside a blender. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. All food-contact surfaces must be cleaned to sight and touch. Corrective Action: Corrected at time of inspection.

Observed several knives at the prep station area and on the cooking line that were stored between prep units or stored between a prep unit and an adjacent wall. In-use utensils must be stored in a clean, dry location; in running water; or in hot water above 135°F. If utensils are stored in food, the handles must be stored above the surface of the food. All in-use utensils were properly stored at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes
Observed employee wash hands for less than 15 seconds then begin to put on gloves to prepare meat. Manager reviewed proper handwashing procedures with employee. Discussed with the manager providing more staff training on the importance of proper hand washing procedures. Proper handwashing procedure is to rinse hands with warm water, scrub with soap for 10-15 seconds, rinse with warm water, dry with approved drying provision, and turn off in a manner to prevent re-contamination of hands. Entire process should take approximately 20 seconds for full and proper handwashing to prevent spread of pathogens and contamination. Corrective Action: Corrected at time of inspection.
