Inspector's notes
Observed packaged cheese slices and wrapped breakfast sandwiches with internal temperatures measuring 50°-51°F in display cooler across from cashier. Ambient air temperature of top two shelves of cooler measure 50°F and ambient air temperature of bottom three shelves measured 41°F. Manager was unsure of how long items were at a temperature above 41°F and discarded items at time of inspection. Discussed having unit serviced to ensure it maintains an ambient air temperature of 41°F or below and keeping TCS food items in reach-in display cooler next to cashier until display cooler has been serviced. Corrective Action: Corrected at time of inspection.
