Observed some organic matter on the inside of the soda fountain nozzles at the soda fountain. Discussed with person in charge to clean the soda fountain nozzles on a more frequent basis to prevent the accumulation of organic matter in the nozzles. Food-contact surfaces were properly sanitized at time of inspection. All food-contact surfaces must be cleaned to sight and touch. Corrective Action: Corrected at time of inspection.

Observed blanched fries in a cooling phase, stored in approx. 6 inch deep containers with the lids on. The fries were prepared approx. 2 hours ago (cooling log not available) and measured with internal temperature of 115 degrees F. Instructed PIC to remove the lids to allow for cooling parameters to be met. Discussed cooling parameters and methods. Correct By: Corrected At Time Of Inspection

Discussed with person in charge that when the spray nozzle for the hose is not in use then the spray nozzle needs to be removed. Person in charge had turned off the water and release the pressure from the spray nozzle. Ensure that the spray nozzle is disconnected from the main water line when not in use. Per person in charge (PIC), the sanitizer dispenser was not working properly and a work order had been placed. Sink was drained and refilled with water. Quat was added to the sink and measured within the proper range at time of inspection. Reviewed sanitizer requirements with the PIC. Correct By: Corrected At Time Of Inspection
