PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding. Observed refrigerated unit in lobby with ambient temperature measured to be 45-47*F holding Time/temperature Control for Safety (TCS) foods (salad, cheese bread, meatballs, cream cheese sauce) with internal temperatures measured to be 47-55*F. Per Person in Charge (PIC) salads were just made and stocked one hour prior. Salads were moved back to walk in to facilitate rapid cooling. Per PIC cheese bread, meat balls and cream cheese sauce were in unit overnight. These items were voluntarily discarded, see embargo. Establishment has adequate alternate coolers holding proper temperature at time of inspection to use until this unit has been repaired.
