Observed individually packed tartar sauce sitting in an ice bath at 67-70°F. The ice mostly melted and was below the level of the food. Alerted the manager who stated the tartar sauce had only been in the ice bath for 2 hours. Staff replenished the ice at the time of inspection. Ensured ice was added to the level of the food. A bag of ice was also added to the top to of the cold-holding products. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed cooked chicken wings (98-111°F) cooling out at room temperature near the walk-in. Alerted the manager who stated they pre-cool cooked wings until they are not steaming before moving them into the walk-in. Staff stated the wings had been cooked 1 hour before temperature measurement. Cooling Time Temperature Control for Safety (TCS) food must be moved to ACTIVE cooling after reaching 135°F. Time Temperature Control for Safety (TCS) foods must then actively cool from 135°F to 70°F within 2 hours and from 135°F and 41°F or less within a total of 6 hours. Discussed cooling logs which were posted onsite. The manager stated they would start using the posted cooling logs. Corrective Action: Corrected at time of inspection.
