Observed fresh house-made salsa which had been prepared two days ago without a datemark. Alerted the manager who date marked the salsa at the time of inspection. Observed the date marking log typically used at the location had not been filled out. Discussed date marking with the PIC. All RTE/TCS foods must be date marked after 24 hours and used within 7 days (including the day it was made as day 1). Corrective Action: Corrected at time of inspection.

Observed multiple containers of partially full and empty food containers sitting on top of the hot holding unit. The hot holding unit was on and being used to store hot foods. The Person in Charge stated that the containers on top of the hot holding unit were food items to be discarded and the empty containers were dirty. No direct contamination was observed. Staff instructed to not store dirty or foods to be discarded above the hot holding unit. Discussed miscellaneous sources of contamination. Corrective Action: Corrected at time of inspection.
