Inspector's notes
Observed the left side prep cooler on the main cook line to have an ambient temperature of 55.5F, checked with a recording min/max thermometer. Observed multiple TCS food items, including cooked/canned corn, shredded cheese, corn dogs, mac and cheese, buffalo dip, etc. to have internal temperatures ranging from 50-53F. Per staff and PIC, these items have been in prep cooler since yesterday. See embargo form for complete list. The hanging thermometer in this cooler was found to be non-functional and reading ambient temperature of 48F. PIC had staff set up ice baths for TCS food items until unit can be repaired and hold an ambient temperature of 41F or lower. Corrective Action: Corrected at time of inspection.

Repeat Violation PRIORITY VIOLATION-3-501.16(A)(2) and (B) - Priority: Time/Temperature Control for Safety Food, Cold Holding. Predefined Comment: All TCS foods improperly cold held were discarded by PIC at time of inspection. Predefined Comment: Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Second consecutive violation.

Observed ice build up on walk-in freezer fan unit as well as around door frame and door seal. Please have walk-in freezer repaired to prevent future ice build up and remove current ice build up. Corrective Action: Correct prior to next routine inspection.

Observed bottles of ranch (65°F) on top of ice at the server station. Alerted manager and re-educated staff on ice bath usage. Foods cooled in ice bath are to be submerged in ice to the level of the food. Employees stated the ranch had only been out for less than 3 hours and they remade the ice bath at time of inspection, properly submerging the bottles. After a discussion with the person in charge, it has been determined that the root cause of the violation was a policy issue, which resulted in the violation. Corrective Action: Corrected at time of inspection.

Cajun bacon alfredo made on 11/5, 8 days ago, was found in the walk in—alerted manager who discarded the Cajun bacon alfredo at time of inspection. All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1).After discussion with the person in charge, it has been determined that the root cause of the violation was a verification breakdown, which resulted in the violation. Corrective Action: Corrected at time of inspection.

Wings sitting on cart near grill measured with an internal temperature of 70 degrees F. Per kitchen staff, the wings were not there to cool but were there for use. They were cooked just over 4 hours ago. There was not a cooling log available to determine if the wings were safe regarding cooling parameters. The wings were recommended for discard.
